FRESH MEAT STEW

Fresh meat stew. Both north and south in Zambia, this would be served with cornmeal mush, called Nshima.
[edit] Ingredients
- 11/2 pounds Beef, cut in cubes
- 2 cups water
- 3 onions, sliced
- 1 tomato, peeled and sliced
- 1/4 to 1/2 cup peanut oil
- 2 chili peppers or 1/2 - 1 tablespoon crushed red pepper
[edit] Directions
- In a heavy stewing pan, combine meat, water, and onions. Simmer 30 minutes. Add tomato, oil, and chili peppers.
Continue simmering until meat is tender, 30 to 45 minutes more.
Variations:
- This same stew may be made with Chicken, Lamb, or fish. Eliminate the chilli pepper for a southern Zambian version.
