Marzipan in English is almond paste; traditionally made with almonds, sugar and egg whites, it has a very strong almond flavor; it is now sold ready-made; used in several pastries and desserts.
- Dry the almonds and then crush them as fine as possible.

- Mix it until it attains a consistent elasticity.
