Easy Rice Pudding Pie with Fruit

Makes 6 to 8 servings.

- 1/2 cup Sugar
- 1/4 cup all-purpose flour
- 3 cups milk
- 2 eggs, slightly beaten
- 2 cups cooked rice
- 2 teaspoons grated orange peel
- 1 teaspoon vanilla extract
- 1/2 cup whipped topping
- 1 prepared graham cracker crust
- 1 11-ounce can mandarin oranges, drained
- 2 kiwi fruits, sliced
- 1 banana, sliced

- Combine Sugar and flour in 2-quart saucepan; gradually stir in milk.
- Cook, stirring constantly, over medium heat until thick and bubbly, about 10 minutes.
- Reduce heat; cook, stirring, an additional 2 minutes. Remove from heat.
- Gradually stir in 1 cup hot mixture into eggs.
- Return egg mixture to saucepan; bring to a slow boil.
- Cook, stirring, 2 minutes. Remove from heat.
- Stir in cooked rice, orange peel and vanilla.
- Cover and chill in refrigerator.
- Fold in whipped topping; pour into crust.
- Just before serving, garnish with oranges, kiwi fruit and banana
