Easy Lemon Pie

1 pkg. lemon Jell-O (3 oz) 2/3 cup boiling water 2 T. lemon juice 2 t. grated lemon rind, optional 2 cups ice cubes 8 oz. cool whip, thawed 1 graham cracker crust

Dissolve Jell-O completely in boiling water. Stir 3 minutes. Add lemon juice, lemon rind and ice cubes and stir constantly until Jell-O is thickened, about 2 to 3 minutes. Remove any unmelted ice. Using wire whisk, blend in cool whip then whip until smooth. Chill if needed until mixture will mound. Spoon into pie crust. Chill 2 hours or freeze until firm. Garnish as desired.
