Ingredients[]
- 6 cups (675 g) flour
- 2 cups (425 g) sugar
- 6 tsp (30 ml) baking powder
- 4 tbsp (60 ml) margarine
- 2 eggs
- 2 tsp (10 ml) ginger
- 1 cup (250 ml) stout
- 2 cups (500 ml) mixed fruit or ½ lb (2 cups / 225 g) raisins
- 1 cup (250 ml) milk
- 1 tsp (5 ml) orange rind
Directions[]
- Prepare tins (2-8" round).
- Grease with shorting.
- In a large mixing bowl, put flour, sugar, baking powder, and other dry ingredients.
- Mix well.
- Melt margarine over low heat.
- Remove from heat.
- Add stout and eggs.
- Add liquid mixture (step 3) to dry ingredients.
- Mix well.
- Mixture should be soft.
- Add milk to get a soft but not dropping consistency.
- Put into greased loaf tins.
- Let rest for about 30 – 45 minutes.
- Bake at 350 °F /180 °C for 1½ hours.
