- Mix the milk, cinnamon, peels, eggs, raisins and sugar and put in a bowl at low heat.
- Do not stir unless it is sticking to the pot.
- The white of the milk will ultimately harden and float in thin caramel.
- Turn off the heat and let cool.
- Chill before serving.
