Delightful Zucchini

1 pound zucchini 1/2 onion, thinly sliced 4 eggs 1 1/2 to 2 cups grated Swiss cheese Salt and pepper 1/2 t. oregano 1/2 t. basil

Steam zucchini and onion. Do not overcook. Beat eggs and add cheese. Mash (do not puree) zucchini and onions and add to eggs. Add salt, pepper, oregano and basil. Pour into greased baking dish and bake covered in a preheated 325 oven until set, about 45 minutes to 1 hours. Source: Southern Collection, Then and Now
