Custard Rice Pudding

1/2 cup rice, cooked 3 eggs, beaten 1/2 cup sugar 1/4 t. salt 1 t. vanilla extract 1 1/2 t. grated lemon rind 1/2 cup raisins 3 1/2 cups milk Ground nutmeg

Preheat oven to 300. Mix all ingredients except nutmeg. Pour into shallow baking dish and sprinkle with nutmeg. Set in pan of hot water and bake about 1 1/2 hours. Serve warm or cool. Makes 6 servings. Source: Come Into the Kitchen
