Currant Squares, called "Flies Graveyeards" in Ireland, are a perennial Irish favorite. This recipes makes 20 delicious currant squares. One of many popular Irish Desserts

  • In a large bowl, mix flour, salt and butter or margarine. Mix well.
    • Add iced water and mix until a dough is formed.
    • Wrap dough in soft cloth and chill in fridge.
  • Put all filling ingredients (currants, lemon rind, apple, butter, sugar, bread, spice) in a saucepan. Mix and bring to a boil. Set aside to cool.
  • Preheat oven to 400°F (200°C).
  • Take half of the chilled pastry dough and roll out very thinly on baking tray.
  • Pour currant filling and spread evenly.
  • Roll out the remaining dough and use it to cover the currant filling. Glaze with egg or milk.
  • Bake for 30 minutes or until golden in color.
  • Dust with Sugar just before cutting into squares and servings.
