Currant Squares, called "Flies Graveyeards" in Ireland, are a perennial Irish favorite. This recipes makes 20 delicious currant squares. One of many popular Irish Desserts
[edit] Ingredients
[edit] Flaky Pastry:
- 140 g (5 oz) firm has-ingredient::butter or has-ingredient::margarine, grated
- 175 g (6 oz) has-ingredient::flour
- pinch of has-ingredient::salt
- iced has-ingredient::water

- 110 g (4 oz) butter
- 80 g (3 oz) has-ingredient::sugar
- 225 g (8 oz) currants has-ingredient::currants
- pinch of spice
- 1 has-ingredient::lemon, has-ingredient::lemon rind and has-ingredient::lemon juice
- 1 large has-ingredient::apple, grated
- 1 slice of has-ingredient::bread, crumbled
[edit] Directions
- In a large bowl, mix flour, salt and butter or margarine. Mix well.
- Add iced water and mix until a dough is formed.
- Wrap dough in soft cloth and chill in fridge.
- Put all filling ingredients (currants, lemon rind, apple, butter, sugar, bread, spice) in a saucepan. Mix and bring to a boil. Set aside to cool.
- Preheat oven to 400°F (200°C).
- Take half of the chilled pastry dough and roll out very thinly on baking tray.
- Pour currant filling and spread evenly.
- Bake for 30 minutes or until golden in color.
- Dust with Sugar just before cutting into squares and servings.
