Crockpot Taco Casserole

Makes 6 servings

1 1/2 pounds ground beef, browned 14 1/2-ounce can diced tomatoes with chilies 10 3/4-ounce can cream of onion soup 1 package dry taco seasoning mix 1/4 cup water 6 corn tortillas, cut in 1/2-inch strips 1/2 cup sour cream 1 cup shredded cheddar cheese 2 green onions, sliced, optional

Combine beef, tomatoes, soup, seasoning mix, and water in crockpot. Stir in tortilla strips. Cover. Cook on low 7 to 8 hours. Spread sour cream over casserole. Sprinkle with cheese. Cover. Let stand 5 minutes until cheese melts. Remove cover. Garnish with green onions. Allow to stand for 15 more minutes before serving.
