  1. Cut a 1½ inch slice in a scallop pattern from top of each apple; reserve apple tops.
  2. Hollow each apple to within 1 inch from bottom, leaving a ½ inch shell.
  3. Spinkle insides of apples with lemon juice.
  4. Freeze apples overnight.
  5. Combine fresh cranberries and orange juice, mixing well.
  6. Set aside.
  7. Combine 1 cup water and sugar in a heavy saucepan, bring to a boil.
  8. Reduce heat, cover and simmer 5 minutes.
  9. Stir in cranberry mixture and 2 tablespoons lemon juice.
  10. Simmer uncovered, an additional 5 minutes, stirring occasionally.
  11. Skim off foam, and cool.
  12. Pour cranberry mixture into freezer can of a 2-quart freezer.
  13. Freeze according to manufacturer's instructions.
  14. Mound sorbet into frozen apple shells; place apple tops on side of mound.
  15. Store in freezer until serving time.
