Purchased from DeYoung Estate in Tulsa, Oklahoma in 1982. Dated 1937.

  1. Cut peppers in half lengthwise.
  2. Discard pulp and seeds and rinse carefully.
  3. In a large mixing bowl, combine remaining ingredients except breading mixture.
  4. Stuff pepper halves with crab mixture and press stuffing around pepper.
  5. Set peppers aside.
  6. To prepare breading mixture, place cracker meal in a flat pan; mix together milk, eggs and salt and pepper.
  7. Dip peppers in egg mixture, then in cracker meal.
  8. Repeat procedure.
  9. Deep fry at 365°F until golden brown.
  10. Drain well.
