  1. Blend flour and softened butter until like coarse crumbs.
  2. Add confectioner' Sugar.
  3. Press into buttered 9" square pan or 10x7x1/2" rectangular pan.
  4. Bake at 350° for 15 minutes until golden.
  5. When crust is baking, beat eggs.
  6. Add 1 1/4 cup Sugar, very gradually.
  7. Beat intul very light and fluffy, 5 minutes High with electric mixer.
  8. At low speed, add flour, baking powder, vanilla and salt.
  9. Fold in rhubarb with spatula.
  10. Pour over baked crust.
  11. Spread evenly.
  12. Bake at 350 ° for 40 minutes until light brown and top feels dry.
  13. Serve cooled, with whipped cream and strawberries.
