(16 oz. each) frozen corn kernels, thawed 1/2 t. salt 6 Tbsp. (3/4 stick) butter 1/4 t. black pepper In a blender or a food processor that has been fitted with its metal cutting blade, process each package of corn separately until coarsely chopped, scraping down the bowl as needed. Transfer to a large saucepan and add the remaining ingredients. Cook over medium heat for 6 to 8 minutes, or until heated through, stirring constantly. NOTE: If using a blender, process instages for just a few seconds at a time, making sure to scrape down the container several times while processing so that all the corn is coarsely chopped. But don't overdo it or you'll end up with mush!
