Ingredients[]
- 2 cups cornmeal
- ½ tsp salt
- ½ tsp baking soda
- 2 tsp baking powder
- 1 tbsp sugar or honey
- 1 egg
- 1 tbsp vegetable oil
- 1 cup buttermilk or sour milk (1 cup low-fat milk + 1 tablespoon vinegar)
Directions[]
- Combine the cornmeal, salt, baking soda and baking powder in a bowl.
- Mix very well.
- Add the wet ingredients, mix again.
- Pour into a lightly oiled 8-inch-square baking pan.
- Bake in a 400°F oven for 20 to 25 minutes.
