This is a rare recipe for Congolese avocado Salad.
- 3-4 avocados, with 1/2 avocado per person
For the filling:
- 1/4 cup shelled shrimps
- 1/4 cup Tuna (tinned)
- 1/4 cup cold salmon flaked (fresh or tinned)
- 1/4 cup mixed vegetable salad diced (of your choice)
Wash and cut avocado in half lengthwise and remove the stone. Blend selected filling with sufficient salad cream or French dressing to moisten the mixture. Fill centre of avocado and decorate with paprika pepper. Serve chilled on lettuce leaves.
