- 3 leeks
- 2 Medium potatoes
- 3 Cups vegetable or chicken stock
- 1 Cup heavy cream
- salt and pepper to taste
- 2 avocados
- chopped chives or chopped cilantro

- Heat stock in a saucepan and add leeks and potatoes.
- Boil,then reduce heat and simmer about 20 minutes.
- Stir in the heavy cream.
- Puree avocado in blender.
- Stir in the avocado as heat embitters the avocado.
- If serving cold refrigerate.
- Serve both with minced chives or cilantro.
