  1. Soak the gelatin in the cold water for five minutes and dissolve in the hot coffee.
  2. Add lemon juice and sugar, stir until dissolved.
  3. When cool, strain over sherry—if used.
  4. Turn into a mold, first dipped in cold water.
  5. Serve with whipped cream.
