Lovely coconut jam tart

  1. Preheat oven to 350°F.
  2. Cream butter and sugar, add beaten eggs.
  3. Mix in sifted flour with a fork.
  4. When dough holds together and ingredients are well combined, shape into a ball and refrigerate for 30 minutes.
  5. Roll out to fit a 8 inch pie dish.
  6. Fill with jam.

Topping Edit

  1. Cream butter and sugar, and beat in egg.
  2. When combined, mix in coconut.
  3. Spread this topping over the jam.
  4. Bake for 40 – 45 minutes in preheated 350°F (175°C) oven.
