  1. Combine juice, sugar and spices in large saucepan; bring to a boil, stirring constantly until sugar is dissolved.
  2. Boil for 2 minutes.
  3. Add food coloring and pectin; bring to a rolling boil for ½ minute.
  4. Use enough food coloring to make the jelly deep red.
  5. Remove from heat; skim.
  6. Pour into hot sterilized decorative jars; seal with paraffin.
  7. Label with a Christmas seal and store in a dark, cool place.
