Ingredients[]

  • 3 cups hot cooked rice
  • 2 chipotle chiles en adobo, finely minced
  • 1/2 cup corn kernels
  • 1 tablespoon minced cilantro
  • 1/2 cup grated sharp Cheddar Cheese

Directions[]

  1. In large bowl, combine rice, chiles, corn and cilantro; mix well.
  2. Serve topped with Cheese.
