Chinese Chop Suey

1/4 cup butter 3 cups diced pork 2 cups onions, finely sliced 2 cups celery, thinly sliced 2 t. salt 1/2 t. pepper 2 cups hot water or chicken broth 2 cans beans sprouts, drained and rinsed Chow Mein Noodles thickening/Flavoring: 2/3 cup cold water 4 T. cornstarch 4 t. soy sauce 2 t. sugar

Melt butter in skillet. Add meat and stir to sear. Add onions and cook 5 minutes. Add celery, salt, pepper and hot water or broth. Cover and cook 5 minutes. Add sprouts, mix and heat to boiling point. In a small bowl, combine thickening and flavoring ingredients. Add to meat mixture. Stir lightly and cook 5 minutes. Serve hot with chow mein noodles.
