Chicken with Cheese Sauce
3 whole chicken breasts, cut in half 1 1/2 t. salt 1/4 t. white pepper 3 T. flour 4 T. butter 1 cup milk 3 T. grated Parmesan cheese 2 T. grated Swiss cheese
Bone chicken breasts (or purchased boneless chicken breasts). Put each half between 2 pieces of wax paper and pound very thin. Rub each half with mixture of the salt, pepper and 2 T. of flour. Melt 3 T. butter in large skillet and brown chicken in it, skin side first. Transfer to large shallow baking dish. Melt the remaining tablespoon of butter in pan, blend in rest of flour. Gradually add milk, stirring until it reaches boiling point. Cook over low heat for 5 minutes. Mix in the cheeses until they are melted. Pour over chicken breasts. Bake in preheat 350 oven until top is golden brown. Serves 6 Source: My Old Recipes
