  1. Stir together the chicken, apple and egg in a medium-size bowl.
  2. Add yogurt and mayonnaise, stir to combine.
  3. Season to taste with salt and pepper.
  4. Serve immediately or cover and chill up to 4 hours.
  5. Spread chicken mixture on half of the bread slices.
  6. Top with remaining bread slices.
  7. If desired, cut away crusts.
  8. Cut each sandwich into 4 triangles or squares.
  9. Great to serve as finger sandwiches at a special luncheon.
