Chicken Lettuce Wraps Barefoot Bites pg. 8

Sauce: 2/3 C hoisin sauce 2 tbl rice vinegar 1 tbl honey 1 lime, juiced 1/2 tsp sriracha hot chili sauce (optional) 2 tsp sesame oil 1 garlic clove, minced (I actually use my microplane grater) 1 tsp freshly grated ginger

Wraps: 2 boneless, skinless chicken breasts, cubed (into 1/4-inch pieces) 1 carrot, grated 2 green onions 1/2 C bean sprouts 1 C chow mein noodles 1/2 C unsalted peanuts, chopped 2 heads of Boston (or Bibb) lettuce, separated into whole leaves.

In a small saucepan, over medium-low heat, blend sauce ingredients until thoroughly mixed. Set aside to cool.

In a saute pan, over medium-high heat, saute chicken until browned and thoroughly cooked then add enough sauce to coat (about 3 tablespoons). Remove from heat and add carrots tossing to coat and allow to set 10 minutes. Add green onions, bean sprouts, noodles and peanuts, gently toss adding more sauce to coat (about 2-3 tablespoons more).

To serve: Set out lettuce and chicken and let everyone wrap their own, serving with extra sauce on the side

Serves 8 as an appetizer, 4 as a main dish.
