Chicken Fricassee

  1. Poach the hen in salted water about 90 minutes.
  2. Cool it.
  3. Cut the meat into bite-sized pieces.
  4. Melt the butter and stir in the flour.
  5. Gradually add the cooking liquid.
  6. Season with salt, pepper, curry powder, and orange rind.
  7. Simmer 5 minutes.
  8. Add the cream and simmer 5 minutes more.
  9. Stir in parsley.
  10. Serve the chicken in the sauce with boiled potatoes, peas, carrot cubes, and cauliflower.
