Cauliflower and Tomatoes in Creamy Dijon Cheese Sauce
2 pkg. frozen cauliflower, broken into florets (10 oz each) 2 tomatoes, peeled, chopped and drained 2 green onions, chopped 1/4 cup mayonnaise 1/4 cup sour cream 1 t. Dijon mustard 1 cup grated Swiss cheese 2 T. grated Parmesan cheese Salt and pepper to taste
In a shallow porcelain baker, place cauliflower, tomatoes and green onions. Stir together the remaining ingredients and spread mixture over the vegetables. Can be held at this point. Before serving, heat in a 350 oven for about 20 minutes or until cheese is melted and top begins to brown. Serve at once. Serves 6 Source: With Love from Darling's Kitchen
