Broccoli may be substituted for cauliflower or a mix may be used. We have been making these since 1955 and love them. I hope you will too. Enjoy!
- 1 head cauliflower
- 1 egg or egg substitute
- 3 tbsp matzo meal
- salt & pepper, to taste
- 1/3 cup oil (vegetable works best but olive or nut could be used)
- Boil cauliflower in unsalted water until just tender.
- Mash and add remaining ingredients, except oil.
- Drop from the tip of a large spoon into hot oil.
- Brown on both sides.
