Salads include: tomatoes, garlic, different seeds, cucumbers, chili peppers, mushrooms, olives and onions, mixed with olive oil. The most significant Yemenite salad is the tomato and coriander salad, or the banadura salata b`kizbara, which can be a starter to any meal. This salad includes fresh coriander leaves, hot chili pepper, ripe tomatoes, lemon juice and virgin olive oil. The guava salad is made, besides guavas, with mushrooms, onions, green olives, parsley, fresh and dried drill and sesame seeds. Yemen has a special traditional sauce or dressing called hilbeh, made of black peppercorns, caraway seeds, black cardamoms, coriander, lemon and tomato puree. Another recipe used for many meals is the Yemeni spice mix, made of caraways seeds and cardamom seeds. Eggplant is also used very often including in spicy sauces, with tomatoes or in salads, including currants. Tomato sauce is added to different meals and salads and it can get very spicy.
