The soups with chicken are represented by the Yemenite soup ala Maida. The guava salad is made, besides guavas, with mushrooms, onions, green olives, parsley, fresh and dried drill and sesame seeds. Yemen has a special traditional sauce or dressing called hilbeh, made of black peppercorns, caraway seeds, black cardamoms, coriander, lemon and tomato puree. The most eaten fish are: cod, whiting and flounder and the fish is usually fried in olive oil. A famous meal dish is the Yemeni filo, which includes samboussek, ground beef, finely chopped onion and garlic and a lot of spices: salt, curry, cumin, coriander and pepper. The Yemeni desserts are made with honey, like the honey cake (bint al sahn). The honey cake includes active yeast, flour, eggs, ghee, melted butter and warm honey as a topping. The teas and coffees are very famous in Yemen and they include original flavors, usually sweet, like ginger (qishir coffee).
