Taro is a staple of the Tuvaluan diet and it is used for the taro and coconut cake or the taro leaf and coconut soup. The taro cake is prepared with mashed taro, melted butter, grated coconut, eggs, milk, nutmeg, cinnamon and sugar and the taro soup is made of oil, onions, garlic, basil, pepper, taro leaves or spinach, coconut cream, chili sauce and chicken stock. The traditional desserts include banana spreads, the coconut mousse and coconut shakes or ice-creams, which contain both ground coconut and the fruit’s light and flavored milk.
