Sierra Leonean salads are mainly various leaves combined with fishes of all sorts, very frequently eaten on the coastal areas. The okra leaves salad contains pint palm oil, dried fish, beef, shrimps, red peppers, onions and various seasonings. A similar recipe is the cassava leaves salad, with meat, dried fish, cooked beans, groundnut paste, peppers and garlic. Both meals are served with the traditional foo-foo or with plain rice. Another famous recipe in Sierra Leone’s the local oleleh, which is prepared with fresh black-eyed beans, pal moil, flaked dried fish, onions, red pepper, all wrapped in banana leaves and served hot.
