The salads of El Salvador include many veggies and greens with vinegar dressing. Among the most famous salads, there is the curtido, which is basically a cabbage salad. Curtido is made of shredded cabbage, peeled and grated carrot, minced scallions, white vinegar, fresh or dried oregano and crushed red pepper flakes. Besides cabbage and carrots, among the most used veggies for the El Salvadorian salads, there are the cucumbers and tomatoes: cucumber salad with jalapeno, garden tomatoes salad, the refreshing cucumber salsa or the tomatoes celery salsa in tomatoes juice. Some of the salads are consumed, like in the Mexican cuisine with corn chips and special dips.
