Because lunch is the most important meal of the day, it is also the most consistent one. The most common appetizers include meat, nachos and salads, with a variety of spices and hot, traditional sauces. The nachos are mostly served as nachos mi pueblito (or nachos of my village) or tortilla chips with dipping sauce made with jalapenos, black olives, tomatoes or mango salsa. The most common salad, served as an appetizer, is the ensalada mixta, with various veggies and guacamole dip. Also, there are some appetizers that include fish, like ceviche de pescado and fish with tomatoes and rice.
