The traditional Rumanian lunch, which is also the most important meal of the day, has four different courses: appetizers, soup, main course and dessert. Since the main course is often very consistent and nutritious, Rumanian appetizers are kept to a minimum and are easily digestible. In most cases, the appetizers will be served on a platter with an assortment of food items. Sliced salami (see Salami preparation ), sliced sausages, chopped vegetables, cheese and olives would be part of an average appetizer platter. Another popular appetizer consists of boiled eggs dipped in mayonnaise and served with fresh vegetables, see Stuffed eggs with mayo or red onion prepared with vinegar. Although the American style appetizers, with crackers and sauces, are not at all popular in the rural areas, you will probably find such an entrée in many Romanian restaurants. Other types of sauces are often used with cheese slices or with light salad assortments.
