The Paraguayan soups include veggies, meat or meat broth and fat as vegetable oil or butter. There is a wide variety of meat soups, which include mostly beef meat. Among these, there is the so`o yo-sopy soup, translated as beef soup, which is made of ground lean sirloin or round steak, vegetable oil, chopped onions, green bell peppers, hot peppers, tomatoes, rice or vermicelli and grated parmesan cheese. There is also the winter squash soup, which is prepared with butter, onions, carrots, garlic, tomatoes puree, hot chilies, butternut squash, chicken broth and pepper. Besides these, there is sopa Paraguaya, which is a sort of pudding with corn meal and milk.
