The Paraguayan appetizers are mostly soft, with dough or fish filling. The soft and light appetizers are best represented by the variety of cremas: crema de puerros or crema de arvejas. The appetizers that contain fish are served with rice, like the mayonesa con pescado (with surubi fish, onion, pickles and crema de leche – milk cream). Huevos rellenos is another favorite starter, similar to filled eggs. The filling for the eggs is made with ketchup, vinegar, mayo and various other aliments. Salsas accompany foods many times, like the salsa blanca (white salsa) with coliflor, which is served with hard boiled eggs.
