Shurbah is considered to be the most important Omani recipe and it consists of finely chopped onion, tomatoes, oatmeal, butter, black pepper, cardamom, thyme leaves, and chicken, beef or vegetable bouillon cubes. However, this kind of soup can be transformed into a vegetarian one, adding as many fresh vegetables as possible.
