The wide range of exotic plants that can be found in Niue includes taros, papayas, coconuts, bananas, yams, cassavas and breadfruits and all these are intensively used in the local cuisine. The takini is a traditional Niue dish which contains pieces of taro in leaves and baked in an earth oven. Other local specialties include the faikai, which is marinated white fish with coconut cream. The coconut crab dish is called uga and is consumed with the coconut bread and mashed vegetables, like the mashed taro. Other seafood dishes are represented by the steamed shellfishes, which are served with cassava or yam.
