The Nicaraguan salads, called ensaladas are mostly based on greens, beans and various herbs and spices, but they do not include meat. The ensalada de jicama y naranja, translated as jicama and orange salad is prepared with habanero chili powder, segmented oranges, jicama cut in juliennes, thin sliced scallions and chopped cilantro as a garnish. The mixed vegetable salad is another salad that contains kidney beans, green beans, cabbage, tomatoes, salad oil, cider vinegar, sugar and avocado. Besides these salads, there are some special dips and sauces that top the salads or various meat meals and the most loved of all is the chimichurri sauce, which is made with parsley, oregano, garlic, onion, paprika and olive oil.
