People in Nicaragua consume all sorts of meats, without preferences. A famous meat meal is represented by the oxtail stew, which is prepared with uncooked white beans, lard, beef oxtails, garlic, yellow onion, tomatoes, beef stock, allspice and hot sauce. Gallo pinto is among the most famous dishes and it consists of roast beef, tortilla dough, dried cheese, eggs, green peppers, onion, garlic, ground pepper, paprika, sour orange and pork lard. There are many kinds of meat mixtures, like vaho, in which meat is combined with plantains and yuca. There are also the famous brochetas, which include fish meat and a salsa with sugar, tomatoes, lemon, vinegar and oil.
