Venison- this dish is very popular on the Mainland. Usually this dish made with meat can be prepared in many ways either like a stew, salads, on skewers or as a ragout.

Bougana- this is a traditional New Caledonia dish made in a traditional way. All the ingredients are being wrapped in banana leaves and then steamed. Usually this dish is made with chicken, sweet potatoes, bananas, tomatoes and yams
