“Ananas con Vinho do Porto” translated as Fresh Pineapple in Port Wine is made from sweet pineapple, sugar and red port wine. The core is removed from the pineapple and sugar is added on the pineapple slices. When served the pineapple is turned into wine. The Mozambican Papaya and Egg Yolk Pudding is made of papaya, egg yolks, sugar, lemons, water, cloves whole and stick cinnamon. First the papaya is peeled and chopped, then the lemons are squeezed to obtain the juice and the peel of the lemon is rubbed to obtain a zest. Make a mixture from the papaya, lemon and water and blend it until a smooth mixture is obtained. Add sugar, the cloves and the cinnamon stick and stir while boiling. It’s cooked until a few drops of the mixture dropped in cold water form coarse threads. When this is done the pan is removed from the heat and the cloves and the cinnamon sticks are removed. The egg yolks are beaten until the yolks become thick. Over the egg yolks is poured the hot sauce and the mixture is beaten until it is smooth and thick and should have a deep bright yellow color. It is served at the room temperature.
