The Mongolian meat dishes are in the most cases based on mutton. It is stewed, boiled, filled with dough, baked with oil and flour or consumed with thin, long pieces of pasta. No matter what preparation method is chosen, the mutton represents the most important Mongolian traditional dish. Tourists have accused the bad smelling of this food and usually they avoid it. Those who wish to taste other meats, besides mutton, are recommended to try horsemeat and marmot. The second of them is usually roasted and the games that were organized to catch the marmots have a very old tradition. It is cooked using the Mongolian original cooking technique that is called rock cooking. This procedure consists of putting hot rocks inside of the marmot.
