Monaco recipes combine delicate textures with flavored spices to get a unique taste. The sweet and sour onions with raisins or locally called onions a la Monegasque is a favorite salad or topping, prepared with tomato puree, olive oil, bouquet garni, raisins, pickling onions and pepper. The fougasses are the traditional dessert – they are similar to biscuits, with sugar aniseed of red and white and with a flavor of orange and rum. The pan bagnat sandwiches are light snacks, made of round rolls, olive oil, minced onion, green pepper, tomatoes, boiled eggs, anchovies, rinsed and pitted black olives and vinegar.
