Soups are generally served at lunch before the main dish. Moldavian people prefer thick soups mixed with bors. Bors is a sour liquid made of wheat beans and it has to be kept in bottles for a few days to ferment. Moldavian soups are made with meat, vegetables or fruits and the traditional bors. A traditional soup made with fruits is the Cherries soup prepared without meat. Cherries soup is made with cherries, flour, salt, red whine and sugar. The Dry beans soup is prepared with pork meat, beans, onion, salt, oil and it is served with toasted bread. A traditional Moldavian soup is Potato soup with bors made with beef or pork meat, onion, potatoes, leustean and green parsley.
