Mexican soups are generally thick, spicy and made with tomatoes or beans as vegetables and with various kinds of meet. The Azteca soup is prepared with tomatoes, chipotles and cilantro, all in chicken broth. Chicken is also used for the enchiladas and tortillas soups. Besides chicken, soups also contain turkey meat (busy night turkey taco soup with avocado cream), beef (caldo de res soup or the famous menudo) and pork (the posole soup with pig head and ears). Other original recipes of soups are: Santa Fe apple pumpkin soup, which is a creamy meal, made of apple nectar, chicken broth, heavy whipping cream, pumpkin, dark brown sugar, ground cumin, chili powder, ground coriander and nutmeg, with a topping of cheddar cheese and the albondigas soup, made with both ground pork and beef, plus chicken stock, white rice, onion, eggs, cumin, oregano, garlic, zucchini, carrots and tomatoes. Corn zucchini soup, taco soup and Spicy Tomato Soup with Meatballs and Cilantro are other popular Mexican meals.
