Mauritius is a country surrounded by the sea. Thank to the great varieties of fish found in the sea much great soup are made in this country. Mixing ingredients from three different continents soups made in Mauritius have great flavors and unique tastes. Cooling and refreshing soups must contain fish meat and tropical fruits or vegetables. Seafruit soups like those made with oysters or craps are very rich and frequently served as main dishes. Chicken mulligatawny soup combines ingredients from the local cuisine and the Indian one and is made with chicken meat, dry yellow peas, crushed ginger and onion, tamarind paste. For seasoning local chefs often use curry and coriander leaves.
