When you talk about a serious and real cuisine you should also take into consideration the methods used in preparing soups. The most popular Malian soup is West African lemony chicken-okra soup which consists of lemon juice, sliced okra, broiler chicken, uncooked long grain rice, chicken broth or water, peeled and chopped onions, peeled and chopped tomatoes, tomato paste or sauce, pepper, salt, ground red pepper, and ground turmeric. If you need some suggestions concerning the method of preparation, you can choose the following: cut up broiler-fryer chicken. Then rub lemon juice over chicken pieces and put in a large kettle with chicken broth or water. After that, bring to a boil and lower heat and cook slowly, leaving it covered for twelve minutes. At the end, add all the remaining ingredients and continue to cook slowly about thirty minutes, up to the moment chicken and rice are tender. Then remove chicken pieces and debone, cut meat into small pieces and finally return to kettle.
