The Salted Cod Fish – Bacalhau is a very famous dish in Macau. Its main ingredients are codfish, onion, sugar, white pepper, tomatoes, cabbage and rice. The fish has to be previously marinated in salted water and then the skin is removed. Then all the vegetables are chopped or sliced and cooked together with the rice. A small amount of water should be added. The fish has to be stir fried and then put aside for later use. When the rice and vegetables are almost done you should put the fish on top, cover the cooker and continue to cook. At the end mix everything together and serve it.
